When you feel like a nice biscuit to accompany a cup of tea, you can’t go past a buttery lemon cream filled cookie. Save yourself a trip to the shops and bake your own, these only took around 45 minutes to make from scratch, and if you luck out like me, someone else will bake a batch for you. You’ll never guess who made these!

After living with someone for 17 years, I didn’t think that there were many surprises left to be discovered, but the other night, the Mr pulled a cat out of the bag and amazed us with his baking skills.

After bemoaning the fact that I really wanted a biscuit with my cup of tea, but the treat cupboard was bare, Mr Man got up off the couch, summoned the child and announced that they were going to bake. To be honest I wasn’t expecting anything fancy, he’s never had an interest in cooking, and most of his well meaning attempts end up at best, edible.

While I watched Cake Wars, I could here the conversation coming from the kitchen which was based around the most efficient dough cutting pattern to minimise wastage. I imagine there was some precise measuring going on. Questions like, ‘where’s the caster sugar?’ were relayed by Emma, who at this stage was getting excited at the prospect of eating cookies before bed.

I would have been happy with just a plain batch vanilla butter cookies, but the Mr doesn’t do things by halves, and the book had a picture of sandwiched biscuits, so of course his required filling.

And when they were done, the kid ran into the lounge room with a look on her face like she’d just discovered her dad had a secret superpower “OMG MUM! Did you know dad could make biscuits!” Her mind was blown.

When I saw his perfect batch of Lemon Buttercream Sandwich Cookies, my mind was kind of blown too. I was very impressed, and also a little annoyed. I mean, he could have been baking me fresh homemade cookies for the past 17 years!

I bet you all agree that these turned out super professional looking, and they taste just as good. I asked him to set aside a plate of the best looking ones so I could photograph them for the blog, and for someone that groans every time I pull my phone out to take a shot of our meal, he was pretty pleased to have his handiwork showcased.

This recipe is a combination of a basic biscuit recipe and and adapted buttercream recipe both from the now out of print cook book, Family Circle – Cooking a commonsense guide (aff). It was given to me when I first moved out of home in 1999, and baking recipes are always spot on. You may still be able to find a second hand copy on amazon or ebay.

The Mr used a lemon flavour concentrate for the filling, but I’ve put in an option for a natural alternative if you don’t have a flavour extract handy.

Sadly the cookies are all gone now, but the kid and I are already planning our next requests – maybe Choc Chip Cookies or some Monte Carlos?

Lemon Buttercream Sandwich Cookies

Cook Time: 12 minutes
Total Time: 42 minutes

Delicious melt in your mouth lemon buttercream filled butter cookies. So easy to bake and perfect with a cup of tea.

Ingredients

  • FOR BUTTER BISCUITS/COOKIES
  • 125g (4oz) butter softened
  • 1/2 cup sugar - caster/superfine
  • 1 egg
  • 1/4 tsp vanilla essence
  • 1 cup Self Raising flour
  • 1 cup plain flour
  • FOR LEMON BUTTERCREAM FILLING
  • 60g (2oz) butter softened
  • 1 cup icing sugar
  • 6 drops Wilton Sweet Myer Lemon flavour concentrate or 2 tsp lemon juice and grated rind of 1 lemon

Instructions

FOR BUTTER BISCUITS/COOKIES

  1. Preheat oven to 160C (315F)
  2. Cream together butter and sugar until light and fluffy.
  3. Beat in egg and vanilla, then fold in flours.
  4. Mix to form a soft dough.
  5. Roll out on baking paper to 5mm thick (1/4") and cut out shapes with desired cutter.
  6. Bake in batches for 10-12 minutes until slightly tan in colour. Be careful not to burn edges,
  7. Allow to cool on wire rack before filling.

FOR LEMON BUTTERCREAM FILLING

  1. Beat icing sugar and butter until smooth and fluffy. Add desired lemon flavour.
  2. Pipe or spread frosting onto cooled cookie, and sandwich with another.
  3. Dust with icing sugar if desired.

Notes

The final number of cookies will depend on how thin you roll your dough and the size of your cookie cutter. To limit spreading when baking, chill the dough before cutting and/or once the shapes are cut.

      They don’t last long at our place. I’d recommend in an airtight container they would probably stay fresh for 3-4 days.
