I discovered this recipe on one of those unsourced Pinterest internet hint meme things. It’s super easy and just the thing to satisfy a Chocolate craving without baking a whole cake.
I shared the recipe last week in the My Poppet newsletter, and have had so many lovely thank you emails, that sharing it on the blog was the least I could do.
Make some for the kids as an afternoon surprise, ice cream is optional but makes this treat extra special.

Ingredients
  • Ingredients
  • ¼ cup sugar (I used a little less)
  • ¼ cup SR flour
  • 2 tbsp cocoa
  • pinch of salt
  • 2 tbsp olive oil
  • 3 tbsp water (I added an extra one)
Instructions
  1. Combine all the dry ingredients in a mug, add oil and water and mix well till combined. If it's too dry add a little extra water.
  2. Microwave for 1 min 40 sec
  3. Bing! All done. Careful it's hot.
  4. Cake has a slightly dry consistency so feel free to add liberal amounts of ice cream and chocolate topping whilst still warm.

    I just read this and it sounds YUMMY!
    My daughter is making it as I type this. But she is using stevia instead of sugar. I will try it using stevia and carob powder since I can’t have sugar or cocoa.

    Her results…good, but not as sweet as it probably is with sugar. Not as flavorful as she thought it would be. (We didn’t have any ice cream to add to it.)

    I have found (from family and friends) that people who eat sugar on a regular basis, and then try stevia, say it is not as sweet. (My daughter eats sugar.) I don’t use sugar at all, just stevia, and if I do taste something with sugar it is so sickeningly sweet I almost cringe! But then 10 seconds later my body is saying “I want more!” That goes to show ya just how addictive sugar is! LOL

    In my opinion, you gotta give up sugar and fake sugars if you want to switch to stevia. The others are too sweet and the taste buds have to adjust. Just be patient. Don’t use too much or you will get an aftertaste. Once you use JUST stevia for a while you will find the others to be too sweet. (But watch it…just one taste of sugar can have you addicted again!)

    We are going to try using vanilla cashew milk instead of water next time. That should add a little more flavor. But all in all…not a bad recipe when you have a hankerin’ for something sweet and chocolaty!!!

    And stevia is NO CALORIE…so it is worth trying to switch over too!

      I’ve not tried stevia before, it’s a good alternative. I do find the full amount of sugar a little too sweet for me so I usually reduce it. I don’t usually take any sugar in my tea. I think the cashew milk will give it a nice nutty flavour. Tell me how it turns out.
