If Emma had her way, she’d have pancakes for breakfast every day! Luckily for her, my easy peasy pancake recipe comes together in a pinch, and because it’s so simple, I can whip it up from memory.
I’m teaching her how to make it so she can mix up the batter herself, and all I’ll have to do is cook them.
Just in time for Pancake Day (Shrove Tuesday), here is the only pancake recipe you’ll ever need. This quantity makes about six pancakes, just double it for a bigger batch.
It’s adapted from the pancake batter my mum makes, except she doesn’t measure the ingredients, just throws things in by eye. Making crepes? I just add a little more milk.

Emma likes her pancakes topped with syrup, but my favourite is dulce de leche (just like I had as a kid for afternoon tea on sunday’s). Make them smaller and top with some homemade strawberry jam for a tasty pikelet snack.
What do you like on your pancakes?
- 1 cup Self Raising flour
- 1 cup milk (can be substituted with non-dairy alternative)
- 1 egg
- 1 tbsp sugar
- 2 tbsp butter for pan
- 1 tsp vanilla extract (optional)
- Mix sifted flour and sugar in large bowl
- Beat egg and milk in small bowl (or measuring jug)
- Make a small well in the flour and add liquid ingredients, whisk until smooth.
- Allow to sit for 5 min while the pan/griddle heats to medium heat.
- Cook pancake batter on a buttered pan/griddle, flip when bubbles appear on surface.
- Serve with preferred toppings.
Vanilla excract can be added for extra flavour if desired.
