If Emma had her way, she’d have pancakes for breakfast every day! Luckily for her, my easy peasy pancake recipe comes together in a pinch, and because it’s so simple, I can whip it up from memory.
I’m teaching her how to make it so she can mix up the batter herself, and all I’ll have to do is cook them.
Just in time for Pancake Day (Shrove Tuesday), here is the only pancake recipe you’ll ever need. This quantity makes about six pancakes, just double it for a bigger batch.
It’s adapted from the pancake batter my mum makes, except she doesn’t measure the ingredients, just throws things in by eye. Making crepes? I just add a little more milk.

Emma likes her pancakes topped with syrup, but my favourite is dulce de leche (just like I had as a kid for afternoon tea on sunday’s). Make them smaller and top with some homemade strawberry jam for a tasty pikelet snack.

Easy Peasy Pancakes
Just in time for Pancake Day (Shrove Tuesday), here is the only pancake recipe you'll ever need. This quantity makes about six pancakes, just double it for a bigger batch.
Ingredients
- 1 cup Self Raising flour
- 1 cup milk (can be substituted with non-dairy alternative)
- 1 egg
- 1 tbsp sugar
- 2 tbsp butter for pan
- 1 tsp vanilla extract (optional)
Instructions
- Mix sifted flour and sugar in large bowl
- Beat egg and milk in small bowl (or measuring jug)
- Make a small well in the flour and add liquid ingredients, whisk until smooth.
- Allow to sit for 5 min while the pan/griddle heats to medium heat.
- Cook pancake batter on a buttered pan/griddle, flip when bubbles appear on surface.
- Serve with preferred toppings.
Notes
Vanilla excract can be added for extra flavour if desired.

Cintia, I assume SR flour is ‘self rising’ flour. Is that correct?

I have made these many times they always turn out and are super easy to make thank you for the recipe
I made these on the weekend with my niece and nephew. It was the first time I’ve made pancakes and they were light, fluffy and delicious – and definitely easy, peasy! The recipe made around 6 medium sized pancakes.

Does it have to be SR flour? I’m not going out for it special. I probably wouldn’t even if we weren’t dealing with this nasty virus.
You can use plain flour and add 2 tsp of baking powder if you have it. If you don’t have baking powder, try a little bit less than 1 tsp of Baking Soda (Bicarb). Don’t add too much or your pancakes will taste salty and soapy. Plain flour will do in a pinch but you won’t get fluffy pancakes as there is no raising agent.
