3 Cute Easter Cupcakes to Make

I’ve got three cute Easter Cupcake ideas for you, perfect for all those Easter family gatherings, school events and get-togethers on your calendar this month.

Although they look pretty fancy, I guarantee they are super easy to make.

I’ve included a Basic Vanilla Cupcake Recipe and one for Buttercream Icing too, but go ahead and use a packet mix or bought frosting if that makes your life easier, no judgment here!

I actually made  these cupcakes last year and never got around to blogging about it (better late than never I suppose).

There are lots of variations of these around the web, but I was inspired to make the first two because I wanted to try out a new piping tip I’d just bought that makes cool icing grass.

My piping work still needs lots of practice, but as you can see you don’t need to be an expert decorator to make these cute Easter Cupcakes.

Basic Cup Cake Recipe

Basic Vanilla Cupcake Recipe

Makes 12

Preheat oven to 200C or 180C fan-force. Line a 12 x 1/3-cup capacity muffin pan with paper cases.

Combine flour and caster sugar in a bowl. Make a well in the centre. Add milk, butter, eggs and vanilla to flour mixture. Using a large metal spoon, stir gently to combine.

Spoon mixture into prepared muffin pan. Bake for 12 to 15 minutes, or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes before transferring to a wire rack to cool.

 

Basic Buttercream Recipe

Using an electric mixer, beat butter in a bowl until pale. Gradually add icing sugar mixture and milk, beating constantly until combined.

These have got to be the easiest Easter cupcakes ever, get the kids to help with the piping and ‘laying the eggs’! It doesn’t have to be perfect, in fact the messier the piping, the more like birds nests they look.

Here’s what you’ll need and how to make them:

  • Plain cupcakes
  • Buttercream icing
  • 1/4 cup Cocoa powder + 1 tbsp milk
  • Wilton Decorating tip #233 and disposable piping bag
  • Candy coated chocolate eggs

  1. Beat 1/4 cup sifted cocoa powder and extra milk into basic buttercream icing until smooth.
  2. Spread a thin layer of chocolate buttercream onto cupcakes.
  3. Fill icing bag with butter cream and pipe a a circle around top of cupcake, add a few extra long strands to look like sticks.
  4. Add 3 candy eggs on top of each cupcake.

Grassy Meadow Cupcake

Make a grassy meadow and add your favourite choc Easter animal on the top. Chicks, Lambs and Bunnies will look super cute on top of these easy cupcakes.

Here’s what you’ll need and how to make them:

  • Plain cupcakes
  • Buttercream icing
  • Green food colouring
  • Wilton Decorating tip #233 and disposable piping bag
  • Chocolate animals (Aldi sells little bags of them, foil wrapped)

How to make grass topped cup cakes

  1. Mix green food colouring into buttercream, a few drops should do.
  2. Frost cupcakes with a thin layer of icing to give the piping something to hold to.
  3. Fill icing bag with butter cream. With an upward motion squeeze bag to form grass by pulling up and away, when icing strand is long enough stop pressure and pull tip away. Grass will be neatly formed only if you stop squeezing before you pull tip away.
  4. Add chocolate animal or flower candies.

These are almost too cute to eat and much easier to make than they look. My sister-in-law made these, isn’t she the cleverest!

Here’s what you’ll need and how to make them:

  • Plain cupcakes
  • Buttercream icing
  • Shredded coconut
  • Pink and White mini marshmallows
  • White regular size marshmallows
  • Pink Sprinkles
  • Black decorating gel (or small chocolate buttons)
  1. Frost the cooled cupcakes and dip in shredded coconut.
  2. Cut regular marshmallow in half and dip cut edge in pink sprinkles, place on top as ears.
  3. Arrange mini marshmallows for nose and teeth.
  4. Use gel or choc buttons for eyes.
