I had this delicious and healthy Roast Beef, Broccolini and Wasabi Pea salad at the Museum Harvest Cafe in Lilydale.

I really enjoyed it, and the addition of the Wasabi Peas was genius as salads always need a bit of crunch.

The beef and spicy horserashish covered peas are a classic combination that isn’t hot at all in a salad.
I don’t have the chefs recipe but have written my own version.

I used smoked beef from the deli as an easy alternative to making my own roast beef. It’s a quick and easy healthy salad recipe that would make a delicious lunch or side with a meal. All those greens are good for your insides too!

This salad would be a perfect way to use roast beef leftovers from last nights dinner, and I also think it would work great with leftover roast chicken as well.

Use what you have available, salads are great for mixing and matching.

Healthy Green Salad with Beef and Wasabi Peas

Yield: 2-4 serves

Cook Time: 10 minutes

Healthy Green Salad with Beef and Wasabi Peas - Quick and easy healthy salad recipe with Broccolini, beef and wasabi peas. Great for a packed lunch or picnic.

Ingredients

  • 2-3 slices of roast beef or smoked beef (leftovers or from the deli counter)
  • 50g Vietnamese Glass noodles (vermicelli)
  • 1 bunch broccolini (6 stalks)
  • 1/2 cup snow peas
  • 1 baby bok choi
  • 1 cup parsley leaves
  • 1/2 cup mint leaves
  • 1/2 cup wasabi peas
  • 1/8 cup apple cider vinegar
  • 1/8 cup olive oil

Instructions

  1. Soak glass noodles in boiling water for 10min or until soft, rinse in cold water and drain well. Set aside.
  2. Wash bok choi thoroughly, finely slice stalks and roughly chop leaves.
  3. Blanch snow peas and broccolini, till bright green then plunge in cool water to stop over cooking. Slice beans and chop broccolini.
  4. Tear up beef.
  5. Toss all ingredients and top with wasabi peas.
